White WinesOur white wines are particularly appreciated in the hottest months, to be served cool with ‘hors-d’oeuvres’ and all fish courses. We produce several white wines such as IGT Bianco Toscano and Vermentino but the most wellknown is indeed the ‘Vernaccia of San Gimignano’, a very old grape, already named from Dante Alighieri in the ‘Divina Commedia’ and one of the first Italian wine having obtained the DOC certification! Torrita - Vernaccia of San Gimignano - DOCG white wine100% Vernaccia of Sangiovese grapes with selected harvest by hand , espalier growing with a density of 4400 plants each hectare and a production of about 70 quintals per hectare. Fermentation in steel tanks by crio-maceration at a controlled temperature between 17 and 20 Centigrade degrees. 12,5% alcohol content, straw jellow colour, intense and persistent bouquet, dry and balanced, light bitter taste typical of the Vernaccia wine. Perfect to accompany cheeses as fresh Pecorino and all fish courses but also to be served cold like ‘Aperitivo’.
